Thoughts on the week

My take-away lesson from the Food Stamp Challenge is that while I found it possible to eat a healthy and relatively balanced diet on the equivalent of food stamps, it took a LOT more time and planning than I am generally prepared for, and my diet was very repetitive.My Food Stamp Challenge started with me having to postpone my start date by a few days because I simply didn't have time to go to the store and budget out my food for the week. fish cakes, sushi, and other culinary reflections

Still Challenged by the Food Stamp Challenge

So...on account of my small indiscretion earlier in the week, I am going to try to continue on the challenge until next week. It has been a real tough week. My hot dog diet has led to to a painful gout flareup and changes to my medication.Consequently, the Fairbanks Daily Newsminer covered Senator Wielichowski and myself on the challenge for the week. I was shown eating a hot dog in this mornings paper. I got about a dozen calls from people who are now giving me advice on how to avoid hot dogs…See More

Last Day

Glad to see the week end. What strikes me about this week is our relationships with food and around food. All of that was severely curtailed this week. No little extras here and there. No nachos at the football game, no ice cream with the girls, no coffee at the shop on break.I've lived life on a shoestring before, but not so much with kids in my life and it is definitely different when you're expected to feed your kids health meals on a tight budget.So thanks for the opportunity to particpate,…See More

Pt 2 ( Thoughts following Friday dinner)
